Our smoking experts combine classic European smoking techniques with state-of-the-art technology to produce a very natural-tasting Atlantic Salmon delicacy.
Our experts use an elaborate dry-cure method using pure kosher salt and maple brown sugar. The Atlantic Salmon is smoked in state-of-the art kilns with a time-tested fruit and hardwood combination. We keep the temperature at a constant 2º Celsius (35 ºFahrenheit).
We monitor the smoking process and carefully regulate the temperature, humidity, smoke intensity, air circulation and smoking time to create the best possible smoked product, time after time.
